筆記 – 茄子咖哩 (Eggplant Curry Recipe)

材料:
1. 茄子 (eggplant) 約 4~5條 (切丁)
2. 番茄 (tomato) 約 2~3 顆 (切丁)
3. 洋蔥 (onion) 約 1~2 顆 (切丁)
(eggplant : tomato : orion = 2 : 1 : 1)
4. 孜然子 (cumin seeds) 兩大匙
5. 薑、蒜泥 (ginger & garlic paste) 1 : 1
6. 辣椒 (chili) 兩條
7. 薑黃粉 (turmeric powder) 兩大匙
8. 辣椒粉 (chili powder) 一大匙
9. 香菜粉 (coriander powder) 一大匙
10. 葵花油 (sunflower oil) 兩大匙

方法:
先將油倒入鍋子內開火,放入孜然子稍微炒個幾秒,然後放入洋蔥薑與蒜醬,大概炒3分鐘後,再放入茄子,大概炒3~4分鐘。然後放入番茄、辣椒、辣椒粉、辣椒粉、香菜粉與放一些水,再炒大約7分鐘後,轉小火放一些水讓茄子煮爛、直到剛剛的水煮沸後起鍋,可以新鮮的香菜在上面裝飾,這樣就很完美了~
